FIVE SOUPS: #1 CHICKEN AND WONTON SOUP



 One of my favorite foods is soup. A big yummy bowl of brothy soup can heal your body and your soul. I have tried five soups and stews to share with you. Hope you enjoy!

CHICKEN AND WONTON SOUP
This recipe started with Kylie Kwong's recipes for Light Chinese Chicken Stock,Chicken Noodle Soup and Prawn Wonton Soup all of them can be found in "Kylie Kwongs Simple Chinese Cooking".
This is my mash up of these three recipes.

Broth
2-3 chicken breasts 
48 oz. of canned chicken broth
1 yellow onion roughly chopped
10 slices of ginger
4 cloves of garlic, crushed

Put all ingredients in a big stock pot and simmer for 1 hour of until chicken falls apart. While you wait start chopping your veggies and making your wontons.

Wontons
6 white mushrooms
1 hand full of shredded carrots
3 scallions sliced
1 hand full of shredded cabbage
1 teaspoon finely shredded ginger
1 package fresh wonton wrappers

Combine all the ingredients except the wrappers in a bowl and mix together. To make wontons place 1 wrapper on a clean cutting board. Place rounded teaspoon of filling in center of wrapper. dip your finger in water then run along the edge of the wrapper. fold the wrapper in half towards you to enclose the filling. press to seal. Hold the wonton length ways between your hands with the folded edge facing down.fold the sealed edge of the wonton back on itself then moisten one corner of folded edge with water. Bring the two ends together with twisting action and press together.Repeat with remaining wrappers and filling.  [Putting the wontons together is much easier than it sounds. There are a ton of u-tube videos to show you how if it's your first time]

Vegetables for Soup

You can use what ever vegetables you have on hand or what ever you like best. I used:
Snow peas
mushrooms
bean sprouts
carrots
baby bock choy
spring onion

When your chicken is done cooking. Remove pot from heat. Set aside your chicken breasts and then, using a slotted spoon remove all the remaining solids from the stock. Shred your chicken using two forks and then add to stock. Return stock to a medium heat and add veggies. Add soy sauce, sesame oil and red chili to taste. At this point you could also add more ginger, oyster sauce and a little sugar if you like.  When the broth stats to boil drop in the wontons for 2 minutes.
To serve divide wonton in bowls and the fill with soup. sprinkle with spring onion if you like. Enjoy.









You could of coarse put any variation on this soup you like. The wontons would be good with either chicken pork or cheese.
